Fresh Venus Clams
The full name is the…? wait-for-it?Warty Venus Clam (it’s very knobbly). Obviously people prefer to drop the “warty” bit!? But make no mistake – there’s nothing not to like about this pretty good clam. In France (where they originate? from), it’s known as the praire and generally considered to be on a par with the palourde. Often eaten raw, with just a squeeze of lemon juice. It has decent-sized contents and is therefore well worth stuffing and grilling.
