Megrim sole

Cousin to the lemon and Dover, Megrim Sole is not so well known, partly due to its less attractive looks and not quite so amazing flavour.? That said, it is still a wonderful fish full of amazing possibilities. Pan fry in butter and serve with a delicate buttery sauce or bake in the oven and add lots of spicy vegetables? – your fish to have your way!
