Description
Plaice are easily identified by its distinctive orange spots, which also give an indication of the freshness of the fish. (The brighter the spots, the fresher the fish). The flavour of Plaice is not as strong as Lemon Sole, but takes sauces and other flavourings very well. Plaice are great battered.
Available all year round but best during May to Feb. Plaice have a mild, sweet flavour that is soft and breaks into small flakes. Low in oil, this fish can be served with creamy, sharp, strong, spicy or delicate sauces. This versatile fish can be pan fried, griddled, grilled, deep fried or baked whole or, when filleted can be pan fried, grilled, deep fried,?poached or steamed.
